Now its time to apply the materials for each side of the mesh. First, you need to open the 3D panel (Window > 3D), then click the little arrow to the left of the mesh's name to expand the materials list.
Select the Front Inflation Material to start modifying its values. First you need to get rid of the Diffuse texture if there is one. To do so, click the Diffuse texture icon, then choose Remove Texture. You'll need to do the same thing for the other materials as well, as the texture might hide any applied colors.

The new 3D features in Illustrator are still in the early stages of development, and most of the shortcomings detailed here are planned to be fixed in subsequent releases. The January 2022 update, for instance, is scheduled to include both perspective views and the ability to apply mapped artwork onto objects. Other functionality, such as the ability to apply different materials to objects within the same group, will follow.
I hope this tutorial is helping so far and you are starting to understand all the things you can do in photoshop. We have now built our scene, its time to light and render it. (we will get to animation at the end).
*Note: The lists are collapsed in the image to show you that the 3D objects are in the same scene now, but your lists will most probably be expanded. If not, click on the little arrow next to each mesh name on the left to expand its materials list.
I have been using the 3d features in Photoshop CS6 Extended and I love all of the materials that are included and that you can download from Adobe's website. However, I have been trying to find some additional materials and I'm wondering if anyone has created some, or if someone out there knows where I could find some. I have searched online for them but so far no cigar. Thanks
@daveMac: I'm glad you like them. I made the 36 materials, as well as the 100+ at Photoshop.com for Adobe's CS 5 release. During the CS 6 build was was tasked with redesigning the UX (User eXperience) and we did not get time to make or release new materials. We may in the future, so watch Photoshop.com's 3D content page for an update, is all I can say...

Now I will be picky on the term usage here. Material and texture is not the same thing. A texture is a 2D image, probably one you made or found on the internet. A material is an object created to display a texture on a model. In Unity, you can toss a texture onto a model and not have too many repercussions. In UDK, you'll find you must create a material for your texture before you can do anything with it. Making materials for your textures, even if they're simple checkers, is still good practice.
When you're at this point, the first step to do, before plugging in any textures, is choose the shader. I will briefly cover the creation of a custom shader in the double-sided materials section.
